This course is oriented towards meeting guest expectations and providing quality service through the understanding of menu planning, product costs and pricing strategies, preparation and production, sanitation and safety as well as facility design, layout and equipment. The course also aims at acquainting the students with the methods of managing, motivating and leading staff to achieve high standards of service and a quality product for successful and profitable food and beverage operations.
